An EE associates degree is about as worthwhile as a general associates degree - good only for clearing generals out of the way for a transfer to a 4 year university to get a bachelors degree.

If you have the right field of study, getting an internship at an EE firm will be simple enough regardless of whether you have an associates degree in anything or not. Getting a full-time job with one is another story, however, and even if you do get a FT job with them, you won't be paid any more than an intern. If you want a really good EE job, then you need a bachelors degree.

Online courses for EE? HAHAHAHAHAHAHAHA!!!!!!!!! You have to get hands-on lab experience in order for them to be really worth it at all. You can know all you want about circuit theory or digital logic, but unless you can build a physically working amplifier out of transistors and a board, or design and implement a simple microprocessing unit in VHDL on an FPGA, your knowledge is pretty much worthless. And courses that teach you that are the associates level classes. The ones that will really do well for getting you a job are ones that teach you to do VLSI designs, fabricate semiconductor devices, do video encoding on an FPGA board through a VGA port, design and implement an embedded system, handle wireless or optical communications, or handle large power systems, and those you can't get at an associates level.

You aren't going to. There are many programs of study which cannot be done online, and electronics/engineering are two such programs. They require hands on experience under the instruction of a trained and qualified professional. You just can't learn some things on your own! I understand the reasons behind wanting to get an online/correspondence degree, but I do worry that the people who are getting such degrees are wasting their time and money. The kind of learning done in the classroom is nothing like what happens online.
