Well actually there are a lot you learn in graduate school, but it depend on what you are interested in.
By the way, have you learned about programming? Most higher level DE have no solutions and must be computed by computer.

I think DE is a good thing and may be is the pinnacle of mathematic itself. It is something you must learn and master if you want to understand a lot of physical equations.

Im studying Neural Networks at the moment and whilst some of the maths is complex, its mostly algebraic functions.
If you have a reasonable grasp of Algebra and programming you should be able to do it

I would go for Radiologic Technology, I'm also the one who's going onto my first year in Rad Tech. So I've heard a lot about it from people who are in medical field. It's perfectly one of good careers, like you get paid really well, At least I think more than Infomation Tech. Plus there's always a high demand now and in the future. That's just I can tell you about comparing between Rad Tech and Information Tech.

In statistics, yes absolutely. If you want to be an experimental psychologist you need to understand how to perform statistical analysis of your data.

If you want to be a clinical psychologist then you still need to know how to perform statistical analysis of data. first of all, you may want to publish research if you experimentally test various therapy methods in your practice. Second, most graduate schools for psychology use the "scientist practitioner" model, which means that practitioners (clinical psychologists) need to be trained to act as scientists as well.

There are very few positions open to a person with a bachelors in psychology, so you will most likely need some amount of graduate training to be what you want to be. Even if you choose not to pursue graduate school, most psychology programs will at least require STAT 100

In the UK many colleges offer A level mathematics courses but it is not easy to complete them in one year; although it is not impossible.

It depends on your history; as far as mathematics is concerned. I did A level in one year but had taken good foundation courses.

Few colleges open at weekends.

The cost is not great but lessons/study time might spread over a few days which might cause a problem.

Visit a local college and ask. Be careful that they offer what you want and then you enrol and find it is not what you wanted. (I used to work in such places)
