How can I learn all the math I need for the gre?

I was in a similar position. I got Kaplan's "GRE & GMAT Math Workbook" ($12 on Amazon) and studied with that for about 4 months. I also found a tutor and studied with them on a few occasions (it was only $30/hour - so I only spent about $150 on them as opposed to the $1100 that a Kaplan course costs). The tutor was really useful in clarifying questions that I had about fundamental math concepts.

I think that if you have the three things listed above: 1) time to study, 2) good math review book, and 3) a tutor on occasion, you'll do well.
